	    <title>민물매운탕 드시는 계절입니다</title>

	    	&lt;P&gt;재료&lt;/P&gt;
&lt;P&gt;냇가에 어항으로잡은 피래미,쏘가리,불거지 20마리정도&lt;/P&gt;
&lt;P&gt;감자3개 호박1/2개 양파1개&amp;nbsp; 대파2뿌리 간마늘많이(7~80g) &amp;nbsp;굵은고추가루30g 고추장&lt;/P&gt;
&lt;P&gt;라면(수제비)1개정도&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;만들기&lt;/P&gt;
&lt;P&gt;1.남비에 적당량의 물을받고 양파썰고 감자는두께0.8cm로 썰어넣고 마늘 고추가루를 넣고&lt;/P&gt;
&lt;P&gt;&amp;nbsp;끓입니다&lt;/P&gt;
&lt;P&gt;2.배를딴 물고기를 넣고 끓이면서 호박과 대파를 넣습니다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; (호박,대파는 끓이면 물러지기때문에 나중넣습니다)&lt;/P&gt;
&lt;P&gt;3. 고추장으로 맛있어보이는색깔로 만듭니다&lt;/P&gt;
&lt;P&gt;4. 라면스프나 다시다로 간을맞춥니다&lt;/P&gt;
&lt;P&gt;5.건저먹다가 국물이 남고 고기를 더잡아넣어 다시끓일때&amp;nbsp; 라면이나 수제비를 넣고끓여&lt;/P&gt;
&lt;P&gt;&amp;nbsp; 드십시요 &lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;라면이나 수제비를 첫번부터 넣어드시면 국물이 너무걸죽해서 좀않좋던데요...&lt;/P&gt;

	    <title>시원하고 맑은해장국</title>

	    	&lt;P&gt;재료:2인분&lt;/P&gt;
&lt;P&gt;참기름(냄비바닥에 깔릴정도),&lt;/P&gt;
&lt;P&gt;&amp;nbsp;간마늘(밥수저하나), &lt;/P&gt;
&lt;P&gt;북어채(100g정도), &lt;/P&gt;
&lt;P&gt;후추가루(적당히알아서)&lt;/P&gt;
&lt;P&gt;사각어묵(2장),&lt;/P&gt;
&lt;P&gt;끓는물 1리터+ 취향&lt;/P&gt;
&lt;P&gt;무우(어른주먹만큼),&lt;/P&gt;
&lt;P&gt;대파큰것1뿌리,&lt;/P&gt;
&lt;P&gt;진간장(색만내기위해서)&lt;/P&gt;
&lt;P&gt;조개다시다(아니면 혼다시)=드실분 취향만큼&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;만들어보기&lt;/P&gt;
&lt;P&gt;1. 참기름을 두툼한 냄비에 적당히 두르고 간마늘을 넣고 볶습니다(약한불에서 오래)&lt;/P&gt;
&lt;P&gt;2. 북어채를 가위로 자르면서 넣고 마늘과 같이볶습니다&lt;/P&gt;
&lt;P&gt;3. 북어채에 걸맞게 후추를 뿌려봅니다 그리고 냄비도 뜨겁게한후 끓는물을 넣습니다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; (이렇게하면 마늘과 북어가 잘풀어져 맛도 많이 우러납니다)&lt;/P&gt;
&lt;P&gt;4. 사각어묵을 물김치할때 무우크기로 잘라 넣습니다. &lt;/P&gt;
&lt;P&gt;5. 무우의크기는 어묵의 크기와 같지만 두께는 0.8cm두께로 두툼하게 썰어 넣습니다&lt;/P&gt;
&lt;P&gt;6. 대파는 어슷썰기로 보기좋은크기로 0.5cm폭으로 써는게 좋을것같습니다&lt;/P&gt;
&lt;P&gt;7. 국물이 적으면 더붓고 간장으로 일식집우동국물색깔을 냅니다 그후에 다시다로 간을 해서 드십시요&lt;/P&gt;

	    	&lt;P&gt;칼은 용도에 따라 여러종류가 있지만&amp;nbsp;&amp;nbsp; 가정용으로는&lt;/P&gt;
&lt;P&gt;일반적인 식도 와 과도 두가지만 있어도 충분하겠지만&lt;/P&gt;
&lt;P&gt;요즘 식생활이 많이 변화되고 있어 빵자르는 칼도 필요하고, 가끔은 훈제연어용칼도 필요하다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;어찌되었든 간에&amp;nbsp; &lt;/P&gt;
&lt;P&gt;일반인은 잘모르는 부분이 있어 소개한다면 &lt;/P&gt;
&lt;P&gt;한쪽만 날을가는 칼이좋다&amp;nbsp; 이는 재료가 마지막까지 깨어지지 않기도 하지만&lt;/P&gt;
&lt;P&gt;절단면도 깨끗하고&amp;nbsp; 자르고져하는 방향으로 잘썰어지기 때문이다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;오른손잡이칼은 오른쪽만 가는칼이 맞고 왼손잡이용은 왼쪽만 갈면 되는칼이있다&lt;/P&gt;
&lt;P&gt;과도,식도,뼈를바르는칼,빵칼 모두 내용은 같다,&amp;nbsp; 일본칼은 대부분 그렇하다&lt;/P&gt;
&lt;P&gt;일본칼의 단점은 녹이슨다는점이다 단단한 정도의 쇠재질은 최고인것같다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;요리사들 사용량으로 볼때&lt;/P&gt;
&lt;P&gt;일본칼은 무쇠종류라 단단해서 일주일에 한번씩 갈아 쓴다면&lt;/P&gt;
&lt;P&gt;독일칼은&amp;nbsp;일본칼에 비해 녹은 안나나&amp;nbsp; 삼사일에 한번 갈아쓰고 있다&lt;/P&gt;
&lt;P&gt;양쪽을 다 갈아쓰는 국산칼은&amp;nbsp; 대형업소에는 거의 사용하지않고있기도 하지만 녹도잘나고 &lt;/P&gt;
&lt;P&gt;이틀에 한번은 갈아줘야 한다 많이 뒤져있다는것을 보여주는것 같다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;얼마전 홈쇼핑에서 유명한칼을 팔아 내용을 알아보니 그칼 모두는 왼손잡이칼이었다&lt;/P&gt;
&lt;P&gt;서양사람(왼손잡이가 많아)들이 많이 사용하는칼인데도&amp;nbsp; &lt;/P&gt;
&lt;P&gt;그칼을사서 사용하는 우리주부들은&amp;nbsp; 재료 마지막부분이 항상 깨어지는것을 볼것이다&lt;/P&gt;
&lt;P&gt;그리고 조금만 사용해도 잘안드는것을 느낄것같다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;우리나라에는 오른쪽만 갈아 쓰는칼이 귀하다&amp;nbsp; 백화점이나 마트에서는 절대 구하지 못했다&lt;/P&gt;
&lt;P&gt;재래시장에 큰칼이 있어 5천원주고 귀한칼을 샀다&amp;nbsp;녹도 안나서 좋지만&amp;nbsp; &lt;/P&gt;
&lt;P&gt;손잡이부분이 다듬질되지않아 무척이나 싸구려틱했다&amp;nbsp;손잡이만 바꾸면 2만오천원이어도 좋을텐데...&amp;nbsp;&lt;/P&gt;

	    	&lt;P&gt;떡국, &amp;nbsp;라면, 육개장,&amp;nbsp;등에 계란을 풀어내는 음식이 있습니다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;이런음식에 넣는계란은 간을하거나 ,양념을 하기전에 넣으십시요&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;이유는 양념과 간을 먼저한후 계란을풀면 계란이 익어 올라오면서 &lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;양념과 간을 먹고올라와&amp;nbsp; 맑은국물이되고, 맛있는 국물은 없어지고 계란에 응집해있습니다&lt;/P&gt;
&lt;P&gt;그래서 만두국에 후추를 담아내고나서&amp;nbsp; 고명위에뿌려 먹었던것입니다&lt;/P&gt;
&lt;P&gt;이방법을이용해서 라면에 계란을 넣고싶다면 계란을 먼저 풀어넣고 나중에 스프를 넣으십시요&lt;/P&gt;

	    	&lt;P&gt;거의 대부분의사람들은 냉동제품을 먹고싶을때 바로먹기를 원하는편인것같은데 &lt;/P&gt;
&lt;P&gt;이는 잘못된 생각입니다&lt;/P&gt;

&lt;P&gt;1.퍽퍽하고 질기다: 너무갑작스럽게 해동을 하면 안과밖이 녹는속도가 달라져 육즙이 빠져나와 &lt;/P&gt;
&lt;P&gt;&amp;nbsp;&amp;nbsp; 퍽퍽해지고 질겨집니다&lt;/P&gt;
&lt;P&gt;2. 고유의냄새말고 잡냄새가 난다: 오랬동안 얼리면서 녹였다 다시얼렸다를 여러번하다보면 &lt;/P&gt;

&lt;P&gt;냉동제품인데 가장비싸다?&amp;nbsp;&amp;nbsp;&amp;nbsp; 냉동제품인데 맛이 기막히다?&lt;/P&gt;
&lt;P&gt;그건참치 이기때문에그럴까요?&amp;nbsp; 왜일까요?&amp;nbsp; &lt;/P&gt;

&lt;P&gt;이유는 냉동방법과 해동방법에 있는것입니다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;참치의 냉동방법은 아시겠지만 초저온급속(영하70~55도c)냉각에의한 급속냉동을 시키고&lt;/P&gt;
&lt;P&gt;해동방법은 영하에서 녹여서 냉장고에 보관하여 시원한상태로 먹습니다&lt;/P&gt;
&lt;P&gt;영하에서 녹이는것이 이해가 안가겠지만 냉수에 소금과 얼음을 넣으면 영하 18도까지 내려갑니다&lt;/P&gt;
&lt;P&gt;그영하의물에 참치토막을 담가 녹이고 완전히녹기전 해동지(네프킨종류)나 융에싸서 냉장고에 &lt;/P&gt;
&lt;P&gt;보관하다가 썰어서 먹는데 &lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;대부분의 사람들이 &amp;nbsp;&lt;/P&gt;
&lt;P&gt;&amp;nbsp;양념육(갈비,불고기,등)을 먹을때&amp;nbsp; 팩을 찢지않고 물에 녹여드시면서 &quot;질기다 맛이없다&quot; 합니다&lt;/P&gt;
&lt;P&gt;절대 상온(영상18~22도씨)에서 녹이면 안됩니다, 찬물도 안됩니다&lt;/P&gt;

	    	&lt;P&gt;삼성몰 양념육 포천원조이동갈비에서 갈비찜을 구입하셔서&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;재료: 갈비찜, 깐밤, 당근,무우,은행&lt;/P&gt;
&lt;P&gt;1. 냉장고에서 충분히해동시킵니다&lt;/P&gt;
&lt;P&gt;2. 드실수있는양을 압력솥에 담고&amp;nbsp; 같이있던 갈비소스를 잠길만큼만 붓습니다&lt;/P&gt;
&lt;P&gt;3. 뚜껑을 닫고,&amp;nbsp; 가스불 을 중간불로 하시고, 끓입니다&lt;/P&gt;
&lt;P&gt;4. 압력솥위에 스팀벨이 칙칙칙칙 소리를내며 흘들때&amp;nbsp; 작은불로 줄이고 약40분간 끓입니다&lt;/P&gt;
&lt;P&gt;5. 40분이 지나면 불을 끄고&amp;nbsp;솥안의 압력이 빠질때까지 기다려시고 뚜껑을 열고 &lt;/P&gt;
&lt;P&gt;6. 밤,예쁘게&amp;nbsp;다듬은 당근,무우,나머지 재료를 넣고 뚜껑없이 5분정도 끓여 드시면 &lt;/P&gt;

&lt;P&gt;3. 애호박을 길이로 4등분해서 3mm두께로 썰어서 넣고 불을 키워 센불로 합니다&lt;/P&gt;

&lt;P&gt;4. 끓으면 멸치를 꺼냅니다(이때 청양고추 조금넣으면 좋아욤0&lt;/P&gt;

	    	&lt;P&gt;재료:&lt;/P&gt;
&lt;P&gt;김치100g 정도(옆으로 곱게썰어서),&amp;nbsp;&amp;nbsp; 곱슬이콩나물50g, 사각오뎅1장,&lt;/P&gt;
&lt;P&gt;간마늘20g, 대파어슷하게 곱게썬것 20g, &lt;/P&gt;
&lt;P&gt;고추가루 약간.&lt;/P&gt;
&lt;P&gt;&amp;nbsp; &lt;/P&gt;
&lt;P&gt;찌개와 국과의 차이는 큽니다&lt;/P&gt;
&lt;P&gt;찌개는 재료를 볶은후 물을 넣으며 국물이 자박자박하며 약간 짭잘하여 밥과 같이 먹고&lt;/P&gt;
&lt;P&gt;국은 재료를 넣어 끓으면 다된것이며 국물이 후루룩 들고 마셔도 될정도로 약간 싱겁습니다&lt;/P&gt;
&lt;P&gt;&amp;nbsp;&lt;/P&gt;
&lt;P&gt;남비에 1.5리터정도 물을 받아 끓입니다&amp;nbsp; &lt;/P&gt;
&lt;P&gt;1. 끓여지는 중간에 김치를 넣습니다&amp;nbsp;+간마늘도 넣고요&lt;/P&gt;
&lt;P&gt;2. 콩나물과 오뎅도 넣습니다 이때 국의 색이 좋지않으면 고추가루로 먹음직스럽게&amp;nbsp; 만듭니다&lt;/P&gt;
&lt;P&gt;3. 대파를 넣고 간을 맞춥니다&amp;nbsp; 드십시요&lt;/P&gt;
